dinner is served! homemade ravioli with fetta and roast pumpkin... its a must try ladies.
how it goes...
you will need
- block of firm fetta cheese
- 2 x punnets of cherry tomatoes
- 1/2 butternut pumpkin
- fresh rosemary
- fresh basil
- fresh lasagne sheets
- parmesan cheese to serve
- 1 egg white

first dice your pumpkin and roast in the oven with olive oil, salt and fresh rosemary.
next halve all your cherry tomatoes and put them in your pot with olive oil, simmer on low with the lid on until the tomatoes have broken down and you have created a sauce.

place your roasted pumpkin in a bowl with crumbled fetta. then lay out squares of your fresh lasagne sheets so that you have equal amounts of bottoms and tops, spoon your mixture into the centre on each square, then top each bottom sheet with a top sheet so you have created little pillows. press down the edges, use a litttle egg white around the edges to seal and whola, all you have to do now is gently cook your pillows and top with your cherry tomatoe sauce and fresh basil.... enjoy!
