oh moussaka

summer is almost over and it has me thinking of yummy dinners and holidays in greece...take me back! one of my favourite dishes when i was there was moussaka and here is a recipe! its super easy!

if you havent had/heard of it before its basically lasagna but instead of pasta sheets it has eggplant slices. its delicous.

this serves 6 so you will have to have friends over.

what you need:

3 large eggplants
1/4 cup olive oil
1kg lamb mince (or beef if you prefer)
1 brown onion
1 tsp allspice
800g can tomatoes
1/2 cup water
bunch of parsley
50g butter
2 tbs plain flour
1 1/2 cups milk
pinch of nutmeg
1 egg
1/2 cup grated cheese

Preheat oven to 180°C. Slice eggplants into about 1cm thick slices, lay out on a tray, sprinkle with salt and set aside for about 15mins. This will get rid of any bitterness. Rinse the slices and pat try.
In batches, cook the eggplant slices in the olive oil until nice and brown.

Brown your mince and add your onion finely chopped.Add 1 tsp allspice, 800g can tomatoes and 1/2 cup water.
Simmer for 20-30 minutes. Stir some chopped parsley, about a quarter of a cup but up to you.

Grease an oven proof dish with a little oil spray and lay out a layer of eggplant slices. You want to do about 3 eggplant layers so roughly one eggplant per layer.
Top with half the mince, layer eggplant again, layer mince again and finish with eggplant.

In a small saucepan melt the butter, Stir in 2 tbs plain flour and Whisk in 1 1/2 cups milk. Stir over medium heat until it boils. Whisk in pinch of nutmeg and 1 egg. Pour over dishe and sprinkle 1/2 cup (40g) grated cheddar. Bake for 20-30 minutes.

ps. you can make small individual moussakas if you have smaller oven proof dishes!
