pretty pavlova!

we love pavlova all year round! but we also think it can also be really chrismassy and the perfect dessert for this time of year!
its super easy to make...yes you have to have it in the oven for an hour but you dont have to wait around and the actual making is not too hard at all!

what you need:
•6 egg whites, at room temperature
•1 1/2 cups caster sugar
•3 tsp cornflour
•2 tsp white vinegar
•1 tsp vanilla essence
•1 1/2 cups thickened cream
•berries or fruit of your choice for topping!

making:
1. preheat oven to 150°C. Line a large baking tray with non-stick baking paper. Draw a 20cm circle on the paper and turn the paper ink-side down.
2.beat the egg whites in a clean, dry bowl until firm peaks form (use electric beater). Gradually add the sugar, 1 tablespoon at a time, beating constantly, until the sugar dissolves and the mixture is thick and glossy. Beat in the cornflour, vinegar and vanilla essence.
3.spoon the meringue mixture onto the circle you drew and use a butter knife to shape the meringue and make peaks and dips.
4.bake in oven for 10 minutes and then turn the oven down to 110°C. Bake for another hour or until the meringue is crisp. Turn off the oven but leave the meringue in oven, to cool completely.
6.whisk the cream in a bowl until firm peaks form (i like to add a little vanilla essence to my cream), spread over the top of the pavlova.
7.top with your fruit! I like berries all in the same colour I find it really festive!

A couple of options…I was watching Maggie Beer last night and she adds chopped macadamias to her egg whites at the end of step 2.

Also, as picture attached you can use lemon curd instead of cream as the topping! And you can buy lemon curd in a jar if you don’t want to make it.
